Perfect for a wholesome gluten free lunch or dinner, this vegetarian twist on traditional nachos is full of nutrients and flavour which will leave you feeling nourished.
This creation is a household favourite as it’s easy and quick to make, isn’t expensive and is super versatile, so you can make it to your liking by varying heat and toppings. The meaty texture of the jackfruit along with the black beans is sure to satisfy any meat lovers out there.

Recipe Ingredients
Jackfruit Mix:-
- 1 garlic clove- finely diced
- 1 onion- finely diced
- 1 x 400g tin of Jackfruit, shredded
- 1 x 400g tin of Black beans
- 1 x 400g tin of tomatoes
- ½ cup of water
- 1 tbs of olive oil
Spice Mix:-
- ½ teaspoon of cumin
- ½ teaspoon of paprika
- ¼ teaspoon of cayenne pepper or chili (adjust for heat)
- ½ teaspoon of sumac
- 1 teaspoon of turmeric
Toppings:-
- 1 x 400ml tub of sour cream
- 1 bag of plain corn chips
- 1 small bag of shredded cheese
- 1 tomato diced
- 1 cucumber diced
Easy Guacamole:-
- 2 large avocados
- teaspoon of onion flakes
- Lemon juice to taste
- Salt and pepper to taste
How to
- Heat olive oil in a saucepan over medium heat. Add the finely chopped garlic and onion and cook for a few minutes, stirring occasionally, until translucent.
- Add the spice mix and stir until combined and aromatic. Stir in the shredded jackfruit and black beans, until just combined.
- Pour in the diced tomatoes and ½ cup of water and mix to combine. Allow to simmer on low heat for 15 minutes.
- While the jackfruit mix is cooking, make the easy guacamole by mashing the avocado in a bowl and adding onion flakes, fresh lemon juice and salt and pepper to taste.
- Serve the Jackfruit mix with corn chips, diced tomato and cucumber, easy guacamole, sour cream and shredded cheese.
Other serving suggestions include:-
- Sprinkling of fresh coriander
- With brown rice
- On soft or hard tacos
Vegan/Dairy Free Option:-
This can easily be made vegan by omitting the cheese and sour cream, and replacing with vegan alternatives such as vegan cheese or nutritional yeast.
