These protein bars are the perfect snack for when you’re after something sweet, light and healthy. Full of whole-food nutritious ingredients, these are easy to make and can be made to your own liking by adding your favourite seeds, dried fruit and type of protein powder.
Makes 1 large batch
Ingredients:
- 2 cups of puffed buckwheat
- 1/2 cup of pumpkin seeds
- 1/4 cup of cacao nibs
- 1/4 cup of hemp seeds
- 1 cup of dried blueberries
- 1 teaspoon of salt
- 1 cup of vanilla protein powder
- 1 cup of rice malt syrup
How To:
- Preheat oven to 180oC. Line a large slice tray with baking paper.
- In a large mixing bowl combine the buckwheat, pumpkin seeds, cacao nibs, hemp seeds, dried blueberries, salt and protein powder.
- Fold the rice malt syrup through the mixture and combine until the mixture is sticky and all ingredients are evenly coated in the syrup.
- Press the mixture firmly into the slice tray and bake in the oven for 15 minutes, or until golden brown on top.
- Once removed from the oven, allow to cool and harden on the bench before removing from the tray and slicing.
