Granola with greek yoghurt is one of my favourite breakfasts, so I decided to create a granola that is high protein, gluten free, made with whole foods and that tastes amazing! It only takes 15 minutes to make and can be eaten for breakfast with yoghurt, as a smoothie topper, with milk and fruit or on its own as a healthy and delicious snack.
Makes 1 Large Batch
Ingredients:
- 2 cups of puffed brown rice
- 1 cup of dried blueberries
- 1/2 cup of sunflower and pumpkin seed mix
- 1/4 cup of chia seeds
- 1/2 cup of vanilla protein powder
- 1/2 cup of pure maple syrup
- 1 teaspoon of salt
How To
- Preheat oven to 180oC. Line a large baking tray with baking paper.
- In a large mixing bowl, combine the puffed rice, dried blueberries, sunflower and pumpkin seeds, chia seeds, protein powder and salt.
- Add in the maple syrup and mix until all ingredients are evenly coated.
- Spread evenly into a baking tray and bake for 10 minutes, or until the mixture is golden brown.
- Allow to cool on the bench for 15-20 minutes and enjoy!
Serving Suggestion:
- Greek yoghurt and fresh fruit
- Baked into muffins or cookies
- Smoothie topper
- Serve with milk of your choice and fresh fruit
