These stuffed mushrooms are perfect on the side of a protein source, or as a delicious and healthy snack. They’re full of nutrients, don’t take long to make and are so tasty. You can add bacon or herbs of your choice to make it your own, or enjoy as it.
Makes 5
Ingredients:
- 80g of Spinach, chopped
- 100g feta, crumbled
- 2 eggs
- 2 cloves of garlic, finely diced
- 5 large portobello mushrooms
- 1 teaspoon of salt
- 1 teaspoon pepper
- 30g of cooking butter, or olive oil
- 60g of shredded cheese
How To
- Preheat oven to 180oC.
- In a large bowl, mix the spinach, feta, eggs, garlic, salt and pepper until well combined.
- Melt the butter in a frying pan and fry the mushrooms on medium heat for 4 minutes each side, or until half cooked. Remove from pan and place on a paper towel to drain any excess liquid.
- Spoon the mixture evenly into the mushrooms and top with the shredded cheese.
- Bake in the oven for 10-15 minutes, or until golden brown on top.
