These gluten free spinach and feta pastries are so good, you can’t even tell they’re gluten free! Best served warm, these are a delicious snack that is easy to make and is a guaranteed crowd pleaser!
Makes 4 large squares or 8 triangles
Ingredients:
- 1 packet of gluten free puff pastry (I used Simply Wize from Woolworths)
- 4 eggs (1 is for the egg and milk wash)
- 100ml of Milk
- 1 teaspoon of salt
- 1 teaspoon of pepper
- 2 cups of chopped baby spinach
- 100g of feta
- 65g of shredded cheese
- 1 teaspoon garlic
How To:
- Preheat oven to 1800c, fan forced.
- Lay the gluten free pastry sheets out on the bench to completely defrost. Cut the sheets in half to make smaller squares.
- In a large bowl, mix 3 eggs, salt, pepper, spinach, feta, shredded cheese and garlic until completely combined.
- Spoon the mixture evenly into the middle of the half of the pastry squares. Place the remaining squares on top of the others and press the edges down to seal the filling in the pastries.
- In a small bowl, whisk the remaining egg and milk until combined and brush over the top of the pastries.
- Bake in the oven for 20 minutes, or until golden brown.
These are best served warm with your favourite sauce!
