This satay chicken bowl recipe has a great balance of macronutrients to leave you feeling balanced and satiated. It is the perfect easy dinner or lunch, and works great as a healthy and delicious meal prep option.
Serves 4
Ingredients:
- 6 chicken thighs, diced
- 1 garlic clove, finely diced
- 1 onion, finely diced
- 50ml of GF soy sauce
- 1/4 cup of natural peanut butter
- 150 ml of coconut milk
- 1 bunch of Bok Choy, or greens of your choice
- 4 cups of cooked rice of your choice
How To
Chicken:
- Heat a nonstick frypan on high heat and add in the diced chicken thighs. Cook for a few minutes, stirring occasionally to evenly brown the chicken.
- Stir in the diced garlic and onion. Reduce to medium heat, and stirring occasionally, cook for 10-15 minutes, or until the chicken is cooked through.
- In a small bowl mix together the soy sauce, peanut butter and coconut milk. Pour over the cooked chicken and reduce heat to low. Allow to simmer for 5 minutes.
Steamed Greens:
- Fill a saucepan half way with water. Bring to a boil.
- Place a steamer on top of the saucepan and add in the greens. Cover with a lid and steam for 3-5 minutes, or until the greens are cooked through.
Serve the chicken mixture with brown rice and greens.
