This quinoa fried rice recipe is my take on traditional fried rice, made with quinoa instead of rice. This has become one of my new go to meals for meal prep as it is super easy to make, tastes great and is packed full of protein. You can make this your own by adding whatever vegetables you like, or swapping the chicken for an alternative protein source.
Makes 4-6 serves
Ingredients:
- 4 chicken thighs, diced
- 1 cup of raw quinoa, rinsed
- 1 zucchini, diced
- 2 garlic cloves, finely diced
- 1 small onion or 1/2 large, finely diced
- 2 cups broccoli florets
- 2 tablespoons of olive oil
- 2 teaspoon ground ginger
- 4 tablespoons soy sauce
How To:
- Place the quinoa and 1 1/2 cups of water in a large saucepan, on medium heat. Stirring occasionally, cook for approximately 15 minutes or until all the water is absorbed and the quinoa is soft.
- In a fry pan, add the olive oil and the finely chopped garlic and onion. Cook for a few minutes, stirring occasionally, until translucent.
- Add the diced chicken to the fry pan and cook for 5 minutes, stirring occasionally. Once chicken is browned stir in the broccoli and zucchini and cook for a further 5 minutes.
- Once the chicken is cooked through, add the cooked quinoa, 1/2 cup of water, soy sauce and ginger to the fry pan. Reduce heat to low and cook for 5 minutes.
