Foundation Cookie Recipe
Designed to be easily modified to your liking, this quick and simple foundation cookie recipe is the perfect base for a variety of gluten free cookie flavours.
I’ve added a few of my personal favourites below, such as granola and cinnamon and traditional choc chip, however you can easily make these any flavour you like.
Try adding different types of nuts, dried fruits, or your favourite chocolate to make these treats your own.
Makes 20 (depending on size)
Recipe Ingredients
Base:
- 2 cups of GF plain flour
- 1 tablespoon Psyllium husk
- 1 teaspoon baking powder
- 1 teaspoon salt
- ½ cup sugar
- 2 eggs
- 125 butter, softened
- 1 teaspoon of vanilla extract
Choc chip variation:
- 100- 150 grams of chopped chocolate or choc chips
*Adjust quantity to your liking
Granola variation:
- 1 teaspoon cinnamon
- 100-150 grams of granola (I used Loving Earth Buckinis Deluxe Clusters)

How To
- Preheat oven to 180oC. Line a baking tray with baking paper.
- Combine the GF flour, psyllium husk, baking powder and salt in a large mixing bowl.
- In a separate mixing bowl, mix the vanilla, sugar and softened butter until completely combined. One at a time, mix in the eggs until creamy.
- Stir the egg mixture into the flour mixture until a dough is formed. The dough should be thick and easy to roll. Mix in any additional variation ingredients such as choc chips, or granola.
- Roll dough into tablespoon sized balls and place on a tray. Using a fork, spoon or glass bottom, flatten to your desired shape.
- Bake for 10-15 minutes. Allow to cool on a wire rack.
These delicious treats are best within 1-3 days of making.
