These gluten free chilli chicken tacos are the perfect quick and easy meal that everyone will love. You can adjust the spice level to your own liking and serve with your favourite taco toppings. Full of protein to leave you feeling satisfied, these are one of my new go to dinners when I’m short for time.
Serves 4
Ingredients:
- Olive oil, for the pan
- 500g of chicken mince
- 2 tins of diced tomatoes
- 1 tin of black beans
- 1 large onion, diced
- 2 garlic cloves, diced
- 1 tablespoon of tumeric
- 1 teaspoon of chilli powder (add an extra teaspoon if you prefer it spicy)
- 1.5 teaspoons of gorund cumin
- 1.5 teaspoons of paprika
- 1 teaspoon of sumac
- 2 packets of gluten free corn tortillas
- 2 avocados, with the flesh cut into slices
- 1 lime
How To
- Heat olive oil in a saucepan over medium heat. Add the finely chopped garlic and onion and cook for a few minutes, stirring occasionally, until translucent.
- Add the turmeric, chilli powder, cumin, paprika and sumac and stir until combined and aromatic. Stir in the chicken mince until just combined. Cook for 5 minutes, stirring occasionally.
- Pour in the diced tomatoes, black beans and ½ cup of water and mix to combine. Allow to simmer on low heat for 10-15 minutes.
- Warm the tortillas up as per the packet instructions.
- Spoon the chicken chilli into the tortillas, and top with fresh avocado slices. Finish with a squeeze of lime juice.
