I was craving apple and cinnamon muffins so I decided to try and make my own healthier version that were gluten free and made with nourishing ingredients. They turned out so well and are absolutely delicious! Best served warm, these make for a nutritious snack, or can be served with greek yoghurt and fruit for a healthy dessert or breakfast.
Makes 6 Large
Ingredients:
- 3 apples, chopped into small cubes
- 1 1/2 cups of almond meal
- 1 1/2 cups of gluten free self raising flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 cup granulated stevia
- 3 eggs
- 1/3 cup of coconut oil
- 1/3 cup of greek yoghurt
- 1 teaspoon vanilla essence
- 1 teaspoon cinnamon
- 1/2 cup soy milk (or any milk)
- 1/4 cup maple syrup
How to:
- Preheat oven to 180oC and grease a jumbo muffin tin.
- In a large mixing bowl, combine the apples, almond meal, gf flour, baking powder, salt, cinnamon and granulated stevia. Mix until well combined.
- In a seperate bowl, mix the eggs, coconut oil, greek yoghurt, vanilla essence, soy milk and maple syrup until well combined.
- Fold the wet mixture into the flour mixture and mix until there are no flour clumps and everything is evenly combined.
- Pour the mixture into the muffin tin and bake for 20 minutes, or until golden brown on top and the muffins are cooked through.
