This Kangaroo steak salad recipe is one of my new favourite lunches as it is full of protein which leaves me full all afternoon, is super easy to throw together and tastes so good. Kangaroo is one of my new favourite protein sources as it is a lean meat which is full of vitamins and minerals and is a great way to add new variety to your diet!
Serves 3
Ingredients:
- 400g Kangaroo steaks, sliced into thick slices
- 100g danish feta, crumbled
- 100g chopped almonds
- 2 tablespoons maple syrup
- 2 tablespoons tahini
- 1 teaspoon dried garlic
- 1 tablespoon olive oil
- 1 tablespoon wholegrain mustard
- Juice of 1 lime
- 3 cups baby spinach
- Salt and pepper, to season
How To:
- In a frying pan, cook the steaks for 2-3 minutes each side on medium heat.
- In a small mixing bowl, combine the maple syrup, tahini, dried garlic, olive oil, wholegrain mustard, and lime juice. Stir until all ingredients are completely combined.
- In a large mixing bowl, combine the feta, almonds, spinach, and tahini dressing.
- Lay the spinach mix on a salad tray and top with kangaroo steaks. Season with salt and pepper and enjoy!
