These gluten free cajun spiced chicken bites are full of protein, and are air fried so they’re a healthier alternative to regular fried chicken. They have only a few ingredients so they are easy to make and taste great as part of a meal or on their own as a snack with your favourite sauce.
Makes 4-6 serves
Ingredients:
- 8 chicken thighs, chopped into medium-large chunks
- 1.5 cups of gluten free bread crumbs (I used corn crumbs but any work)
- 1 tablespoon of turmeric
- 1.5 tablespoons of cajun seasoning
- 1.5 teaspoons salt
- 1 teaspoon pepper
- olive oil, for air frying
How To:
- In a Zip lock bag, add the crumbs, turmeric, cajun seasoning, salt and pepper and shake to mix evenly.
- Add the chicken, seal the bag and shake for a few minutes to evenly coat the chicken in the spice and crumb mix.
- Place chicken down in a single layer in the air fryer, and lightly drizzle with olive oil. You may need to cook the chicken in batches.
- Cook for 15 minutes, or until the chicken is golden brown and crunchy on the outside. Enjoy!
Serving Suggestions:
- With brown rice, honey soy sauce and steamed greens
- With ranch dipping sauce
