This banana bread is my go to snack recipe as it tastes so good, is quick to make and is full of nutritious whole food ingredients. This is best served warm, however it is delicious anyway. I love this as a healthy snack, or warmed up with greek yoghurt and fresh banana and berries for a wholesome breakfast.
Makes 1 Loaf
Ingredients:
- 1 1/2 cups of almond meal
- 1 cup of gluten free flour
- 1 teaspoon of baking powder
- 1 teaspoon of salt
- 1/2 cup of granulated stevia
- 1 teaspoon cinnamon
- 3 large bananas, mashed
- 1 tablespoon of chia seeds, soaked in 3 tablespoons of water
- 2 eggs
- 1/2 cup of soy milk
- 1 teaspoon vanilla essence
- 1/4 cup of olive oil
How To:
- Preheat oven to 1800c. Line a loaf tin.
- In a large mixing bowl, add the almond meal, gluten free flour, stevia, cinnamon, baking powder and salt and mix until well combined.
- In a seperate bowl, mix the bananas, chia seeds, eggs, milk, vanilla essence and olive oil together.
- Pour the wet mixture into the flour mixture and mix until there are no clumps and the mixtures are completely combined.
- Transfer the banana bread mix into the loaf tin and cook in the oven for 30-40 minutes, or until completely cooked through.
Serving Suggestions:
- Warm with butter
- Warm with greek yoghurt and fresh banana and berries
- Toasted with peanut butter
