This burrito bowl recipe is easy to make, tastes amazing and contains a nice balance of protein, carbs, and fats to leave you feeling fuelled and satisfied. You can customise it to your own liking by adding whatever your favourite toppings are and can easily adjust the spice to suit your preference.
Serves 6-8
Ingredients
Mince:
- 1 large onion, diced
- 3 large garlic cloves, finely diced
- 1 zucchini, diced
- 2 carrots, diced
- 1 can black beans
- 2 cans diced tomatoes
- 1 kg beef mince
- 1 tablespoon olive oil
- 2.5 teaspoon salt
Spice Mix:
- 2 teaspoon of cumin
- 2 teaspoon of paprika
- 3 teaspoon of cayenne pepper or chili (adjust for heat)
- 2 teaspoon of sumac
- 3 teaspoons of turmeric
Toppings:
- 4 cups of cooked brown rice
- 1 cucumber, cubed
- 2 tomatoes, cubed
- 1 iceberg lettuce, shredded
- 1 x 400ml tub sour cream
- 1 small bag shredded cheese
Easy Guacamole:
- 2 large avocados
- 1 teaspoon onion flakes
- Lemon juice, to taste
- Salt and pepper, to taste
How To
- Heat olive oil in a saucepan over medium heat. Add the finely chopped garlic and onion and cook for a few minutes, stirring occasionally, until translucent.
- Add the spice mix and stir until combined and aromatic.
- Add the mince, black beans, zucchini, and carrots and mix until well combined.
- Stir in the diced tomatoes, salt and ½ cup water. Once well combined allow to simmer on low heat for 15- 20 minutes, or until the mince is cooked.
- While the chilli mince is cooking, make the easy guacamole by mashing the avocado, onion flakes, lemon juice and salt and pepper in a bowl.
- Once the mince is cooked, serve with brown rice, cubed tomato and cucumber, shredded lettuce, cheese, sour cream, and guacamole.
